Tip! I highly recommend using white cornbread/cornmeal and not yellow cornbread. I grew up with cornbread dressing in Texas, and when I made it for the first time when I moved to California, the sweetness of the yellow cornbread did not go well with the seasoning. This is probably my favorite Thanksgiving side!
