Zesty Meat & Cheese Peppers

Pow, wow, pizazz!! These low-carb, cheesy, meat stuffed Pure Flavor® Aurora Bites Mini Sweet Peppers are going to be your next party hit! Mini sweet peppers are also an excellent source of vitamins A, B6, and C which can boost your mood, protect again infections and prevent cardiovascular disease.

Ingredients

  • 1 lb Pure Flavor® Aurora Bites Mini Sweet Peppers
  • 1/2 lb ground beef
  • 1/2 lb regular or turkey breakfast sausage
  • 1/2 lb American cheese
  • 1/4 tsp cayenne
  • 1/4 tsp oregano
  • 1/4 tsp garlic powder
  • 2 slices dark rye bread
  • 1 tbsp butter, melted
  • Garnish option: fresh parsley or cilantro, minced

    Preheat the oven to 400°F. Place the bread slices on a cookie sheet and bake for 12 minutes. Remove from the oven and cool. Meanwhile, halve and remove the membrane and seeds from the sweet peppers. To a medium skillet on medium-high heat, crumble and brown the beef and sausage until no longer pink. If the pan has excess grease, blot or drain and return to the pan on medium heat. Fold in the cheese and spices and cook until the cheese is melted. Fill each prepared pepper with 1 tablespoon of the meat mixture. Crumble the toasted rye slices into 1/2 cup fine bread crumbs and toss with melted butter. Evenly distribute the crumb topping on each pepper and place on a baking sheet. Bake 15 minutes. Remove from the oven and cool 2 minutes prior to serving.
