  • Recipe

Fill a skillet or deep fryer with oil no more than 2 inches from the top to allow space for the oil to rise. Pat dry the wings to prevent oil splatter. Season both sides with salt and pepper. Once the oil has reached 375°F, carefully drop 8-10 wings and cook 8-10 minutes. Take the internal temperature of multiple wings with a food thermometer. For an accurate reading, lift a few wings from the oil, insert the meat thermometer into the thickest area of the wing (avoiding the bone), and ensure a minimum internal temperature of 165°F is reached. We like ours cooked to 175°F. Lift the cooked wings from the oil, drain, then transfer to a bowl filled with 1/2-3/4 cup of your favorite Woos sauce. Toss to coat well then plate. Make sure the oil reheats to 375°F before dropping in the next batch of wings.
