Very Berry Mug Cake

Are you craving something sweet? Something simple to make that tastes like it came straight from a bakery? This will quench that craving…Very Berry Mug Cake from the Pioneer Woman! The first time I made this, I was pleasantly surprised at how delicate the texture was! The whip on top…perfect touch. Sprinkled powdered sugar would be yummy as well. Instead of strawberries, you could use 3-4 tablespoons of cut up blueberries, blackberries, peaches or raspberries. It’s a perfect dessert for 1 or 2 (1 for me)!

Ingredients

  • 1/4 cup all-purpose flour
  • 3 tbsp sugar
  • 1/4 tsp baking powder
  • Pinch Kosher salt
  • 3 tbsp milk
  • 2 tbsp vegetable oil
  • 1 tsp vanilla extract
  • 2 strawberries, chopped
  • Garnish: Strawberries & Whipped Cream
  • Recipe

    To a 12 oz mug, whisk together all-purpose flour, sugar, baking powder, and salt. Add milk, oil, and vanilla, and whisk again until incorporated. Fold in chopped strawberries, then wipe inside of mug of any excess batter. Microwave for 90 seconds and allow to cool for 2 minutes inside the microwave. Garnish with strawberries & whipped cream.     This is a huge favorite at my house. It’s too easy. I’d say we eat one almost weekly! I keep frozen strawberries diced up in the freezer for this very mug cake! I highly reccommend fresh whipped cream on this one- but it’s good without too.
