Turkey Meatball Subs

This heart healthy meatball sub is sure to be one the whole family will love! Not only does it add a lot of flavor from homemade, baked, juicy meatballs, but it also brings a healthy dose of vegetables with fresh Pure Flavor® Aurora Long Sweet Peppers as well as heart healthy fats from a delicious avocado spread.

Ingredients

  • TURKEY MEATBALLS:
  • 1 1/2lb ground turkey
  • 1/2 cup panko breadcrumbs
  • 1 egg
  • 1 tsp dried minced onion
  • 1 tsp dried minced garlic
  • 1 tsp dried basil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • AVOCADO SPREAD:
  • 2 small avocados, peeled & seeded
  • 2 garlic cloves, minced
  • 1 tsp lemon juice
  • 1/2 tsp salt
  • SAUTÉED VEGGIES:
  • 1 tbsp olive oil
  • 1 pkg Pure Flavor® Aurora Long Sweet Peppers, cut into thin strips
  • 1 small onion, thinly sliced
  • 1/2 tsp salt
  • 1/2 black pepper

    Preheat oven to 400˚F. In a large bowl, mix together meatball ingredients until well combined. Scoop and roll into 1 1/2” balls and place on the prepared baking sheet. Bake for 24-28 minutes or until the internal temperature reaches 165˚F.

    For the avocado spread, in a medium bowl, mash the avocado and mix with garlic, lemon juice and salt until well combined.

    Heat oil in a skillet or grill pan on medium-high heat. Once hot, add peppers and onions. Season with salt and pepper and sauté until tender, about 5 minutes. Remove from the skillet and set aside. If desired, heat or toast buns prior to assembly. Spread a layer of avocado spread on the inside of the top and bottoms buns, add a layer or sautéed veggies and 2 turkey meatballs.
