Sweet & Spicy Beef with Rainbow Roasted Veggies

Admittedly, this was my first try at cauliflower gnocchi…and it was a huge win! My husband and I both loved it. These sheet pan veggies can go with any entree protein, but they definitely paired well with this delicious Sweet & Spicy Beef. You could substitute with chicken or shrimp as well.

Ingredients

  • Rainbow Roasted Veggies
  • 1 red bell pepper, largely diced
  • 1 orange bell pepper, largely diced
  • 1 small yellow squash, half moons or largely diced
  • 1 small zucchini, half moons or largely diced
  • 1/2 red onion, largely diced
  • 8oz mushrooms, quartered
  • 10oz cauliflower gnocchi
  • 3-4 tbsp olive oil, divided
  • Asian seasoning to taste
  • Sweet & Spicy Beef
  • 1-1 1/2 lb steak (ribeye, sirloin, NY strip), cut into 1/4” thick strips
  • 1-2 tbsp olive oil
  • Asian seasoning to taste
  • 1/3 cup barbecue sauce
  • 1-2 tbsp sriracha and/or gochujang paste
  • 1 tsp soy sauce or coconut aminos
  • 1-2 tbsp honey or hot honey

    Preheat the oven to 450°F, and cover a large sheet pan with aluminum foil. To the sheet pan, toss together prepared veggies, gnocchi, olive oil, and Asian seasoning. Roast 15 minutes, toss the veggies, and roast an additional 10-15 minutes or until vegetables are caramelized. While the veggies are cooking, prepare the steak. Heat oil in a skillet on high heat. Once hot, add the sliced steak in 1 layer. Cook 1-2 minutes per side, or to preferred doneness, then remove from the pan. Turn the heat to medium-low. Once the pan has cooled down, whisk together barbecue sauce, sriracha or gojuchang, soy sauce or coconut aminos, and honey. Allow the sauce to simmer on low heat and when the veggies are finished roasting, toss the steak in the sauce until coated well.
