Summer Salmon & Kale Salad

Air fried salmon, seared shrimp, or grilled chicken would be excellent protein toppers for this delicious salad!

Ingredients

  • SALMON
  • 2 6-8oz salmon filets
  • Seasoning of Choice
  • Olive Oil Spritz
  • SALAD
  • 6 cups kale, stems removed and chopped
  • Sun-dried tomatoes, 1/4 oil and 1/2 cup sliced
  • 1/4 cup sliced red onion
  • 1/2 cup sliced fresh basil
  • 1 small avocado, seed and skin removed
  • 1 minced garlic clove or 1 tbsp garlic nuggets
  • 1/4 cup nutritional yeast
  • 1 lemon, juiced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Parmesan Crisps

    Season salmon filets on all sides with seasoning(s), then spray with olive oil. Air fry at 400 for 10-12 minutes or until it easily flakes with a fork or registers with an internal temperature of 145°F. In a large bowl, massage kale with the sun-dried tomato oil. Once coated well, to the bowl add sun-dried tomatoes, red onion, basil, avocado, garlic, nutritional yeast, lemon, salt and pepper. Mix until combined well. Add parmesan crisps, plate and top with cooked salmon filets.
