Strawberry Salad with Chicken

Ingredients

  • Dressing:
  • 4-5 strawberries, halved
  • 1/4 cup olive oil
  • 2 tbsp champagne vinaigrette
  • 2 tbsp lemon juice
  • 2 tsp honey
  • Dash of salt & pepper
  • Salad:
  • 6 cups mixed baby greens
  • 6 strawberries, sliced
  • 1/2 cup sliced red onion
  • 4 green onions, thinly sliced
  • 4 oz goat cheese, crumbled
  • 1/3 cup honey roasted pecans
  • 12 oz chicken, grilled or fried
  • 1 avocado, sliced
  • Recipe

    Blend dressing ingredients in a food processor or blender until smooth. Combine first 6 salad ingredients in a large bowl. Toss with vinaigrette just before serving. Top with chicken and avocado slices.

    Approximate Nutrition Information for 1 salad w/ grilled chicken (makes 4): 383 calories, 25g fat, 16g carbs, 26g protein
