Sticky Balsamic Glazed Drumsticks

Ingredients

  • 12 chicken drumsticks (2.5 lb)
  • 1/2 cup balsamic vinegar
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 1/2 cup brown sugar
  • 4 garlic cloves, minced
  • 2” ginger, peeled & chopped or ½ tsp powder
  • 1/8 tsp red pepper flakes
  • 1 tbsp sesame seeds
  • 1/4 cup green onions, thinly sliced

    In a bowl, whisk together vinegar, honey, soy sauce, brown sugar, garlic, ginger, and red pepper flakes. Marinade the drumsticks in the refrigerator 4-24 hours. Preheat the oven to 400ºF. Line a baking sheet with aluminum foil, top with a cooling rack, place chicken on top, and reserve the marinade. Bake drumsticks for 25 minutes. While the chicken is baking, place the reserved marinade in a small saucepan. Bring to a boil, then reduce the heat to a slow simmer. Cook over low heat, stirring as needed, for about 15 minutes or until thickened. After the chicken has cooked for 25 minutes, brush on the marinade. Cook for 10 minutes more, brush on marinade again, then cook for 5 more minutes or until an internal temperature of 160ºF is reached. Coat the drumsticks one last time, drizzle with any remaining sauce, and sprinkle with sesame seeds and green onion.
