You can use whatever cut of steak you’d like, just determine if it’s at your preferred steak doneness by slicing one after cooking 1-2 minutes per side and golden brown. Shew-wee….they were yumo!

Ingredients

  • 1-1 1/2 lb steak (ribeye, NY strip, sirloin)
  • Flour for dredging
  • 2 eggs
  • Crushed saltines for dredging
    Salt/Pepper
  • Oil (canola, peanut, vegetable)
  • Recipe

Fill a large fry pan with enough oil to measure a 1” depth. Turn to medium-high heat to begin heating while preparing the meat. Cut the steak in 1 1/2” cubes and salt and pepper. Create a dredging station: bowl 1-flour, bowl 2-whisked eggs, bowl 3-saltines. Once the oil has reached 350ºF, dip the steak cubes in each bowl, flour, egg, crackers, and place in the hot oil. Don’t overcrowd the pan, cook in batches if necessary. Flip after 2 minutes then cook an additional 1-2 minutes or to preferred doneness. Remove from the oil to a wire rack and sprinkle with additional salt.
