Spicy Cheesy Cornbread

This cornbread is sweet, spicy, and oh so delicious!!


  • 8.5 oz Jiffy Cornbread Mix
  • 1/2 cup whole kernel corn, drained
  • 1 cup cream-style corn
  • 1 cup shredded cheese
  • 1 egg
  • 1/2 cup sour cream
  • 1/2 cup pickled jalapeños, optional
  • 1-2 tbsp bacon grease or butter

    Preheat oven to 400ºF, and place a 10-inch cast iron skillet inside to preheat. In a medium bowl, combine Jiffy, corn, cream-style corn, cheese, egg, sour cream, and jalapeño. Mix just until combined. Remove the preheated pan from the oven, and season with butter or bacon grease. Pour the batter into the skillet, and bake 35-40 minutes or until it’s cooked through and golden brown.
