Cheesy Chicken Pasta

You might want to pick up a rotisserie chicken the next time you’re grocery shopping to make this quick and delicious one-pan easy meal! It’s perfect for a busy week night!

Ingredients

  • 8oz noodles (spaghetti, fettuccine, ziti)
  • 2 tbsp butter
  • 1 cup diced white onion
  • 1 cup diced green bell pepper
  • 2 minced garlic cloves
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 3 cups shredded cheese, divided
  • (Monterey Jack, Pepper Jack, or Mexican Cheese Blend)
  • 20oz Rotel, drained
  • 2 cups cooked diced chicken
  • 1/2 tsp Cajun seasoning or salt
  • 1/2 tsp black pepper

    Cook the pasta per package directions and drain. In a medium sauce pan, melt the butter over medium-high heat. Add in onion and bell pepper and cook until softened, about 5-7 minutes. Whisk in the garlic and flour, and cook an additional minute. Fold in the drained Rotel, then slowly whisk in milk, bringing to a simmer. Once bubbles appear at the edge of the pan and the sauce begins to thicken, turn the heat to low and stir in the cheese until it’s melted and smooth. Fold in chicken and drained pasta and season to taste.
