Smoked Sausage and Bean Soup

This soup is indeed a hearty one! Rich in fiber and protein, a bowl of this will warm you up and keep you full!

Ingredients

  • 8-12 oz smoked regular or turkey sausage, cut in bite-sized pieces
  • 3 tbsp butter
  • 1/4 cup flour
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 12 oz can evaporated milk
  • 14.5 oz can chicken broth
  • 15.5 oz can undrained cannelloni beans
  • Salt and Pepper

    In a stockpot, cook sausage on medium-high heat until browned. Remove from the pan, and set aside. Lower the heat to medium, add the butter, and once melted, sprinkle in the flour. Scrape up any solid bits from the bottom of the pan. Add the onion, mix, and cook 3 minutes. Add the garlic, and cook an additional minute. Increase the heat to medium-high, and slowly stir in the milk and broth. Once it comes to a boil, lower the heat to low, add the can of beans and sausage, and simmer 5-10 minutes. Season with salt and pepper to taste.
