Sheet Pan Tomato Shrimp & Gnocchi

Sheet pan meals are a fantastic idea for those busy weeknights! This Tomato Shrimp & Gnocchi is easy to throw together, easy to clean and super delicious! The star of the show are plump and juicy Pure Flavor® RedRoyals® cherry tomatoes! Rich on beta-carotene, vitamin C and fiber, these on-the-vine tomatoes are the perfect low-calorie, sweet accent to this amazing dish!

Ingredients

  • 2 12 oz Pure Flavor® RedRoyals® cherry tomatoes
  • 17 oz package gnocchi or frozen gnocchi
  • 12 oz marinated mozzarella balls
  • 4 cloves garlic, minced
  • 1 lb jumbo shrimp, peeled & deveined
  • Salt & Black Pepper, to taste
  • Garnish: fresh basil, Parmesan

    Preheat the oven to 450°F. Line a sheet pan with parchment paper. In a small bowl, coat the shrimp with 1 tablespoon of the oil from the mozzarella balls container. Season with salt and pepper and set aside. To a large bowl, combine tomatoes, garlic, gnocchi and 2 tablespoons of the oil from the mozzarella balls container. Evenly disperse the mixture in a single layer on the prepared sheet pan. Sprinkle with salt and pepper. Bake 12 minutes. Add the shrimp to the sheet pan. Bake an additional 8 minutes or until the gnocchi is slightly browned, tomatoes have started to burst and the shrimp has an internal temperature of 145°F. Transfer to a serving dish, and garnish with the mozzarella balls, basil and parmesan cheese.
