Savory Roasted Cauliflower

I could eat an entire sheet pan of this! Such a yummy veggie side dish!

Ingredients

  • 1 large cauliflower, cut into florets
  • 1/3 cup olive oil
  • 1 tsp Old Bay seasoning
  • 1/2 tsp chipotle chili pepper
    freshly ground black pepper
    salt to taste
  • 3 oz. grated white cheddar cheese
  • 3 oz grated parmesan

    Preheat oven to 450ºF. To a large mixing bowl, combine cauliflower and olive oil. Add Old Bay seasoning and chipotle chili pepper and toss to coat, ensuring all the florets are evenly coated. Place the florets flat on a foil-lined baking sheet. Bake 15 minutes. Remove from the oven and sprinkle florets with cheese. Bake an additional 10 minutes, or until cheese is crispy.
