Savory Chicken Legs

Looking for a tender, juicy, flavorful chicken? Look no further! This one is perfect with any side dish!

Ingredients

  • 2-2 1/2lb chicken leg quarters (4-6 drum/thigh pieces)
  • 4oz plain yogurt
  • 1/2 cup olive oil
  • 1 tbsp Cajun seasoning
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • Recipe

    Remove the skin from the chicken leg quarters and cut 2-3 slits about 1/4” deep in each piece. In a large bowl, whisk together the yogurt, olive oil and seasonings. Once combined, coat the chicken pieces well, pushing the marinade into the slits. Allow the chicken to marinate 2-12 hours. Preheat the oven to 425°F. To a cooking rack-topped, foil-lined sheet pan, add the chicken. Bake 20 minutes, then flip and cook an additional 5-10. Once the chicken reaches 160°F, turn the broiler to high and cook 1-2 minutes or until the chicken is slightly charred and 165°F. Remove from the oven and serve with your favorite side dishes.

    Being a dark chicken eater this sounds right up my alley and I plan on fixing this tomorrow after church but I’m thinking I have all the ingredients so I can mix it up and marinate it tonight… Thank you so much. I do appreciate you

    I did make this, And it was super easy and absolutely delicious… And super tender!! I am so fortunate to have come up on this site, And I’m almost embarrassed to say I think I’ll be spending a lot of time here!!
