Roasted Veggies

When you need to clean out your veggie drawer or feelin’ frisky wanting to make your veggies super flavorful and the star of the show, roast them in this delicious sauce!

Ingredients

  • 12-16 cups chopped veggies (blend & type of your choice) I used zucchini, squash, bell peppers, mushrooms, carrots, broccoli, cauliflower
    Sauce:
  • 1/4 cup soy sauce or tamari
  • 2 tbsp nutritional yeast
  • 1/2 cup olive oil
  • Salt/Pepper to taste
  • Minced fresh herbs of choice
  • 4 garlic cloves, minced

    Preheat the oven 450°F. Spread prepared veggies on a foil lined baking sheet. In a small bowl, whisk together sauce ingredients until well blended. Using tongs or clean hands, toss the veggies with the sauce until all pieces are coated well. Roast in the oven for 40-60 minutes, tossing every 20 minutes until level of caramelization is reached.

    Approximate Nutrition Information 1/8 of the sheet pan (nutrition will vary with veggies used): 200 calories, 14g fat, 13g carbs, 6g protein
