Roasted Juicy Drumsticks with Garlic Rosemary Potatoes

It’s a double dose of yumminess with this recipe! Both can be mixed in their own baking dish, so it’s less clean up. They also bake at the same temperature and able to fit side-by-side in a standard oven.

Ingredients

  • Chicken:
  • 2-3lb chicken drumsticks
  • 1 tbsp each: garlic powder, onion powder, paprika, parsley
  • 1 tsp each: salt, black pepper
  • 3 tbsp butter or garlic butter, cubed
  • 1 cup chicken broth or stock
  • 2 tbsp flour
  • Potatoes:
  • 1 1/2 lb baby yellow potatoes, quartered
  • 3-4 garlic cloves, chopped
  • 1 tbsp chopped fresh rosemary, 2 sprigs
  • 1/4 cup olive oil
  • 1/2-1 tsp salt
  • 1/2 tsp black pepper

    Chicken: Preheat the oven to 450°F. In a small bowl, whisk together broth and flour. To a 13”x9” pan, add drumsticks, seasonings and broth mixture. Toss to coat well. Distribute butter evenly on top. Bake for 35-45 minutes, flipping half-way through. Broil 1-2 minutes. Ensure an internal temperature of 165°F is reached. Potatoes: Preheat the oven to 450°F. To a 2-quart baking dish or square pan, add the potatoes, garlic, rosemary, olive oil, salt and pepper. Toss to coat well. Bake for 40, flipping half-way through.
