Pork Chops & Stuffing

Gotta love the savory, comfort food notes of this dish! Another bonus, it’s simple to make! If you don’t have this delicious seasoning from Trader Joe’s, you can substitute with garlic powder, onion powder, rosemary, thyme, parsley, sage, salt and pepper.

Ingredients

  • 2-2 1/2lb thick pork chops (3/4-1”, boneless or bone-in)
  • Everything but the Leftovers Seasoning (*see note below for substitute)
  • 2 10.75oz cans regular or low-sodium cream of mushroom soup (or homemade)
  • 2 cups vegetable or chicken broth, divided
  • 8oz sliced mushrooms
  • 6oz box cornbread or pork stuffing (use 2 boxes if desired)

    Preheat the oven to 350°F . Season the pork chops on both sides with seasoning and place in a single layer in a 13”x9” pan. Evenly disperse the mushrooms on top. In a medium bowl, whisk together both cans of soup and 1 cup of the broth until well combined. Spread on top of the pork chops. In a small bowl, mix together stuffing and remaining broth and sprinkle on top. Cover tightly with aluminum foil. Bake for 30 minutes, then remove the foil and bake an additional 20 minutes. Broil for 1-2 minutes or until the crust is toasted. Rest for 5 minutes then serve as is or over mashed potatoes or rice.
