Pineapple Jell-O Salad

There’s not a turkey & dressing meal that goes by without my Mamaw’s Jell-O Salad. I always found it interesting that it’s called a salad…but I guess it is green after all.

Ingredients

  • 3oz box lime Jell-O
  • 3oz box lemon Jell-O
  • 20oz can crushed pineapple
  • 4oz regular cream cheese, room-temperature (no substitution)
  • 8oz Cool Whip
  • 1 cup miniature marshmallows
  • 1/4 cup chopped maraschino cherries
  • Recipe

    In a mixing bowl, whisk together lime Jell-O, 1 cup boiling water and 1/2 cup cold water. Once blended well, stir in crushed pineapple. Refrigerate overnight or until firm. Next day, in a mixing bowl, whisk together lemon Jell-O, 1 cup boiling water and 1/2 cup cold water. Allow the mixture to cool, but not harden, then whip with a mixer on high speed until fluffy. In a large mixing bowl, whip cream cheese on medium speed until smooth. Add Cool Whip and mix once again just until blended. Transfer the whipped lemon mixture into the cream cheese mixture and mix on low speed until blended. Add the lime pineapple mixture to the lemon/cream cheese mixture and mix once again low speed until blended. Pour the mixture into a 13”x9” serving dish and garnish with marshmallows and cherries. Refrigerate overnight or until firm.
