Pan Seared Flounder with Tomatoes and Green Beans

This meal is so simple and a great weeknight dinner! Topped with beautiful Pure Flavor® Oriana® Orange Grape Tomatoes, this fish dish heart healthy, colorful, light and super yummy!

Ingredients

  • 5 tbsp olive oil
  • 1 shallot, thinly sliced
  • 3 garlic cloves, minced
  • 1 pint Pure Flavor® Oriana® Orange Grape Tomatoes
  • 12oz green beans, blanched
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2lb flounder filets, about 5-6
  • 1-2 tsp cajun or blackened seasoning
  • 1/4 cup flour

    Heat 2 tablespoons of the olive oil in a skillet on medium-high heat. Sauté shallot and garlic for 1 minute. Add the tomatoes and cook until the flesh begins to crack. Gently fold in blanched green beans and season with salt and pepper. Cook 3 minutes, then turn off the heat.

    Season flounder on both sides with seasoning and lightly dredge in the flour. Heat remaining oil in a large skillet over medium-high heat. Once hot, cook the filets on each side for about 4 minutes. Serve flounder over rice, potatoes or noodles and topped with the cooked veggies.
