On the Go Breakfast Sandwiches

These are perfect to reheat and power up for a great day!


  • 6 English muffins
  • 1 tbsp butter, melted
  • 1/2 lb bacon or sausage
  • 6 eggs
  • 1 tbsp milk
  • 1/2 tsp salt
  • 6 slices cheese
  • Recipe

    Preheat oven to 325ºF. Slice English muffins in half and brush inside with butter. Place on a baking sheet and bake 8 minutes. Remove from oven and increase temperature to 400ºF. Place bacon or sausage on a baking sheet and 20-25 minutes or until bacon is crispy or sausage cooked through. Remove from oven and decrease temperature to 375ºF. In a medium bowl, whisk together eggs, milk, and salt. Pour in a square baking pan and bake 20-22 minutes or until middle is set. Remove from oven and assemble sandwiches with meat, eggs, and cheese. Wrap each sandwich in parchment paper or aluminum foil to refrigerate. Reheat sandwich wrapped in parchment paper or paper towel in microwave for 1-1 ½ minutes. *To lower fat/calories you could use turkey sausage/bacon or ham. Other healthy toppings you could use after reheating add tomatoes, spinach or avocado slices.
