No Peek Chicken Rice

Few ingredients…Few instructions…Few things to clean…TONS of flavor!! WIN…WIN…WIN…WIN!!! It’s is a great recipe on a busy night, a gift for a loved one, nutritious and versatile with it’s ingredients. You can use the lower sodium or heart healthy Campbell’s Soup varieties and change up the protein from chicken breasts to chicken thighs or pork chops. Other variations of this recipe call for 2 boxes of rice, but 1 is plenty for us. It can be mixed ahead of time, refrigerated, and ready to pop in the oven. Ingredients

  • 6 oz box Uncle Ben’s Long Grain & Wild Rice Mix
  • 10.25 oz can Cream of Celery Soup
  • 10.25 oz can Cream of Mushroom Soup
  • 1/2 tsp garlic powder
  • 1 1/4 cup water
  • 1 1/2 lb boneless, skinless chicken
  • breasts, cut in smaller pieces
  • 1 box Lipton Onion Soup Mix (2 packets)

    Preheat oven to 350ºF. In a 13”x9” baking dish, mix together cream of mushroom & cream of celery soup, water, garlic powder, rice, and rice seasoning packet. Place chicken pieces evenly on top of rice mixture, sprinkle with onion soup mixes on top, and cover tightly with aluminum foil. Bake 1 ½ hours. Remove foil and broil on high for 3 minutes.

    Approximate Nutrition Information for 3oz chicken and 1/2 cup rice/soup filling: 232 calories, 6.5g fat, 22g carbs, 21g protein
