Manicotti

Manicotti is definitely an Italian comfort food classic and great for feeding a big family!

Ingredients

  • 12 oz preferred meat, ground beef and/or Italian sausage
  • 1/2 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • Salt/Pepper

  • 12 oz ricotta cheese
  • 2 tsp Italian seasoning
  • Pinch of nutmeg, optional
  • 2 cups shredded mozzarella, divided
  • 2/3 cup shredded Parmesan cheese
  • 1 egg, whisked
  • 8 oz pkg Manicotti Shells
  • 30 oz pasta sauce
  • Garnish options: shredded parmesan and sliced fresh basil

    Preheat oven to 350°F. To a large skillet on medium-high heat, add onion, garlic, sausage, and beef. Season with 1/4 tsp each salt and pepper, and crumble the meat into small pieces. Cook until the onion is translucent and meat no longer pink. Drain and set aside to cool. Blend together egg, ricotta, 1 cup of the mozzarella, 1/3 cup of the Parmesan, Italian seasoning, 1/4 teaspoon each salt and pepper, and nutmeg (if using). Add the cooled meat and mix until incorporated well. Fill each shell with the mixture. To a 13”x9” dish, spread evenly 1 cup pasta sauce. Arrange the prepared manicotti in 1 single layer, then top with remaining pasta sauce, mozzarella, and Parmesan. Cover tightly with foil and bake 40 minutes. Uncover and bake an additional 10, or until the top is golden brown. Rest 10 minutes before serving, and garnish as desired.
