Loaded Roast Beef Sandwich

These sandwiches are the perfect way to repurpose leftover roast beef or deli sliced beef. Gives you french dip and philly vibes!

Ingredients

  • 2 tbsp butter, divided
  • 4oz mushrooms, sliced
  • 1/2 small onion, sliced
  • Salt/Pepper to taste
  • 10-12oz leftover roast beef or deli sliced beef, sliced
  • 2 slices provolone, Swiss or cheddar cheese
  • 2 onion rolls or buns
  • 10oz can french onion soup, beef broth or au jus dipping sauce

    In a medium skillet on medium-high heat, melt 1 tablespoon of the butter. Add mushrooms and onion and cook until caramelized, about 5 minutes. Season with salt and pepper as desired. Heat a griddle pan on medium-high heat, spread remaining butter on rolls and begin toasting on both sides. Add beef to the cooked veggies, stir and cook just until the beef is warmed, about 2 minutes. Heat desired dipping sauce in the microwave or on the stovetop. Add cheese slices to the inside layer of the top bun. Plate the bottom buns on serving plates, add the meat and cheese filling and top with the cheesy top bun layer. Serve alongside dipping sauce.
