Lazy Lasagna

Yummy cheesy meaty goodness, this dish meets several requests. First of all, it’s delicious, Secondly, for those asking for low-carb, diabetes friendly, gluten-free, hearty, and easy…here you go! Some in our family liked dipping it on top of noodles too. Either way, it’s really tasty!

Ingredients

  • 2 lb ground beef or turkey
  • 8 oz 1/3 less fat cream cheese
  • 14 oz 1% cottage cheese
  • 1 1/2 tbsp dried oregano
  • 1/2 tsp salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/8 tsp cayenne pepper
  • 20 oz spaghetti sauce
  • 16 oz fresh spinach
  • 8 oz part-skim mozzarella cheese, grated
  • Optional garnish: snipped fresh basil

    In a large skillet over medium-high heat, cook and crumble your preferred meat until cooked through. Drain off any excess fat. Add the sauce and seasonings, and simmer over low heat for 5 minutes. Add the spinach and stir until it’s wilted. Reduce the heat to medium-low heat and simmer 2-3 minutes. In a food processor or blender, mix the cream cheese and cottage cheese until smooth. Fold the cheese mixture into the skillet, and simmer 2-3 minutes. Top with grated mozzarella. Garnish with fresh basil, if desired.
