Laura Ashley’s Goulash

A friend asked me “What is goulash, and what’s in it?” Well…everyone makes it differently to their taste preference and based on how the recipe is passed down from generation to generation. The American recipe version has a foundation of beef, tomatoes, pasta, and onion. The specifics of each of these, the seasonings, and toppings will vary person to person.

Ingredients

  • 1 large yellow onion, chopped
  • 3-4 garlic cloves, chopped
  • 1 lb ground beef (can sub turkey or chicken)
  • 1 lb Italian sausage
  • 24 oz beef broth or stock
  • 2 15 oz cans diced tomatoes
  • 33 oz tomato sauce
  • 1 tbsp chipotle chili pepper
  • 1 tbsp Italian seasoning
  • 1 tbsp salt
  • 1 tsp black pepper
  • 2-3 bay leaves
  • 2 cups elbow macaroni
  • Cheddar cheese & green onion, optional
  • Recipe

    To a large stockpot on medium-high heat, crumble beef and Italian sausage, and cook until nearly cooked through. Drain excess grease, and add onion and garlic, cooking until onion is translucent and meat is no longer pink. Add broth, diced tomatoes, tomato sauce, and spices, stir until combined. Bring to a boil, then turn heat to low, simmering covered for 20 minutes. Stir in elbow macaroni, and simmer covered an additional 20 minutes. Remove bay leaves, dish, and garlic with cheese and green onions.
