Goulash

Everyone makes their yummy goulash differently. The American version typically has a foundation of beef, tomatoes, pasta, and onion. The specifics of each of these, the seasonings, and toppings will vary.

Ingredients

  • 1lb ground beef
  • 1lb Italian sausage
  • 1 large yellow onion, chopped
  • 3-4 garlic cloves, minced
  • 32oz beef broth or stock
  • 28oz can diced tomatoes
  • 29oz tomato sauce
  • 1 tbsp chipotle chili pepper
  • 1 tbsp Italian seasoning
  • 1-2 tsp salt
  • 1 tsp black pepper
  • 2-3 bay leaves
  • 12oz elbow macaroni
  • Cheddar cheese & green onion, optional

    To a large stockpot on medium-high heat, crumble beef and Italian sausage, and cook until nearly cooked through. Drain excess grease, and add onion and garlic, cooking until onion is translucent and meat is no longer pink. Add broth, diced tomatoes, tomato sauce, and spices, stir until combined. Bring to a boil, then turn heat to low, simmering covered for 20 minutes. Stir in elbow macaroni, and simmer covered an additional 20 minutes. Remove bay leaves, dish, and garnish with cheese and green onions.
