Lasagna Soup

This soup is easy, DELICIOUS and heats up so well!


  • 1lb ground beef and/or Italian sausage
  • 2 minced garlic cloves
  • 24oz jar Jersey Italian Gravy
  • 14.5oz can beef broth
  • 28oz can fire roasted diced tomatoes, undrained
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp Italian seasoning
  • 2 cups lasagna noodles broken into small pieces
  • Dollop
  • 16oz ricotta cheese
  • 1oz fresh basil, minced
  • 2 minced garlic cloves
  • 1/2 tsp salt, or to taste

    In a large pot, crumble and cook ground beef/sausage until browned and no longer pink. Stir in garlic cloves, and cook for 1 minute. Add the Italian gravy, beef broth, fire roasted diced tomatoes, salt, pepper and Italian seasoning. Stir and bring to a boil, then turn the heat to medium. Add the broken pasta noodles and cook until al dente, about 10 minutes. Meanwhile, in a small bowl, blend together ricotta cheese, basil, salt and garlic. Spoon the soup in serving bowl, add a dollop of the ricotta mixture in the middle, and sprinkle with the Italian cheese blend.
