Italian Sausage Tortellini Soup

Baby it’s cold outside, and this delicious soup will warm you up heart and soul!

Ingredients

  • 1lb regular or spicy turkey Italian sausage
  • 1 cup chopped onion
  • 1 cup chopped carrot
  • 3-4 garlic cloves, minced
  • 1 1/2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 48oz regular or low-sodium chicken broth
  • 28oz fire-roasted diced tomatoes
  • 8oz regular or low-fat cream cheese
  • 9-14oz bag tortellini
  • 1 cup heavy whipping cream
  • 5oz baby spinach or trimmed/chopped kale

    To a stockpot on medium-high heat, cook and crumble sausage. Add onion, carrot and garlic, and sauté until the onions are translucent and sausage is no longer pink. Stir in seasonings, broth, tomatoes. Bring to a simmer then stir in the cream cheese. Once the cream cheese has melted and the soup is bubbling, add the tortellini. Cook until the tortellini is al dente, about 5 minutes. Fold in the heavy cream and spinach. Once the spinach has wilted, ladle into serving bowls.
