Garlic Butter Herb Steak Bites

Buttery, garlic, savory steak bites and caramelized potatoes…yes please!!

  • 2-3 tbsp avocado or olive oil
  • 1/2 lb baby potatoes, halved
  • 12 oz preferred steak, cut into even large cubes
  • 1 tbsp butter
  • Handful of fresh herbs
  • 2 garlic cloves, halved
  • Recipe

To a microwave-safe vented bowl, add the potatoes and 1/2 cup of water. Microwave covered for 6 minutes for the potatoes to soften. Heat a large skillet on medium-high heat with oil. Once the oil is hot, add the drained potatoes in one layer, flat side down, and season with preferred seasoning or salt and pepper. Once the potatoes are crispy on the bottom and can easily be pierced with a fork (after about 5-7 minutes), remove from the pan and set aside. Season the steak cubes with steak seasoning or salt and pepper. Allow the pan to heat back to where the oil is smoking, then add the steak cubes in an even layer, spread apart. Cook 1-2 minutes, flip, and cook an additional 1-2 minutes. Push the steak to one side of the pan, and add the butter, fresh herbs, and garlic. Combine with the steak and cook 30 seconds. Add the reserved potatoes, and cook an additional 30 seconds or to preferred steak doneness.
