Fish Tacos with Avocado Cream Sauce & Pico de Gallo

Buckle up for a delicious taco! This recipe takes a bit more prep time with it’s level of freshness, but definitely worth it! To save time, you could purchase ready-made pico de gallo and avocado cream sauce.

Ingredients

  • Sauce:
  • 8oz light sour cream
  • 1/2-1 jalapeño
  • 1 small avocado
  • 1/2 cup cilantro
  • 1 lime
  • 1-1 1/2 tsp Cajun seasoning
  • Pico de Gallo:
  • 2 cups chopped tomatoes
  • 1 chopped jalapeño
  • 1/2 cup chopped cilantro
  • 1 lime, juiced
  • 1/4 cup chopped red onion
  • Salt/Pepper to taste
  • Fish Tacos:
  • 1-1 1/2lb flounder
  • 1 tbsp Cajun seasoning, divided
  • 1 1/2 cups flour, divided
  • 1/3 cup cornstarch
  • 8oz sparkling water
  • 1 egg
  • 1-2 cups canola or vegetable oil
  • Taco Shells: Corn or Flour Tortillas or Lettuce Leaves

    For the sauce, add all of the ingredients to a blender or food processor and blend until well combined and smooth. For the pico de gallo, combine all ingredients in a medium bowl and taste for balance of flavors. For the fish, heat the oil in a large skillet on high heat to 350°F. In one shallow bowl, whisk together 1/2 tbsp Cajun seasoning, 1 cup flour, cornstarch, water and egg. In a second shallow bowl, whisk together the remaining flour and Cajun seasoning. Dip each flounder filet in the dry mixture then the batter mixture. Fry the filets 3 minutes per side, until golden brown and cooked through. Serve taco style on a toasted tortilla or in a lettuce leaf topped with the sauce and pico.

    I’m having trouble finding sparkling water that isn’t flavored . Is club soda ok to substitute? I’ve looked at kroger and Walmart
