Fish & Chips

St. Patrick’s Day is around the corner and has us craving some fish and chips! While the Irish Pub, deep-fried version are delicious, these air fryer or baked crispy cod filets will also have you feeling like you struck a pot of gold!

Ingredients

  • 3/4 lb baby potatoes, cut into 1/4” discs
  • 2-3 tbsp olive oil
  • Seasoning or Salt/Pepper
  • 1-1 1/2 lb cod, cut into even pieces
  • Flour for dredging
  • 1-2 eggs
  • 6 oz salt & vinegar or regular potato chips, crushed Olive Oil spray
  • Optional: tarter sauce or malt vinegar for dipping

    Toss the potato discs with olive oil and season with seasoning or salt and pepper. In a shallow bowl, whisk the eggs. Dip each cod piece into the flour and shake off any excess. Next, dip in the eggs, then the crumbled chips, pressing firmly so that they adhere well. Once all the fish pieces are coated, spray with olive oil, lay the sprayed side down on the basket or cooking rack, and spray the other side. Air Fry Instructions: In an air fryer basket, cook the potatoes at 375°F for 14 minutes. Remove the potatoes from the air fryer and place the cod filets inside. Cook for 10-12 minutes or until toasted and has an internal temperature of 145°F. Remove the cod from the air fryer and reheat the potatoes for 1-2 minutes or until preferred crispiness. Baking Instructions: Preheat the oven to 450°F. On a baking rack sprayed with olive oil, evenly disperse the potato discs. Bake for 10 minutes, remove from the oven, and add the cod filets to one side of the rack. Bake 15-20 minutes, or until the fish has an internal temperature of 145°F and potatoes are crispy.

    Fish breaded with crushed chips …. WoW … lots of flavor choices.., I want to try them … ALL 😋YUMMY
