Fajita Chicken & Rice

The combined flavors of caramelized fajita veggies and marinated chicken will have you adding this to lots of weekly meal rotations!

Ingredients

  • 3 tbsp olive or avocado oil, divided.
  • 3-4 cups sliced fajita veggie blend, onions, peppers, mushrooms
  • 1-2 tsp fajita or taco seasoning
  • 1-1 1/2 lb marinated/sliced boneless, skinless chicken or steak (see note)
  • 2/3 cup uncooked long-grain or basmati rice
    16 oz salsa
  • 14.5 oz low sodium chicken broth
  • 1 cup shredded Mexican cheese blend
  • Optional Toppings: Pico de Gallo, guacamole, sliced olives, cilantro, sour cream, diced jalapeño
  • Recipe

    Heat 1 1/2 tbsp oil in large skillet on medium-high heat. Add veggies and season with fajita or taco seasoning. Sauté and stir 2-3 minutes, then add 1/4 cup water. Once the veggies are tender and caramelized, remove from the pan. To the pan, add remaining oil and chicken. Cook, flipping occasionally, and once cooked through, remove from the pan. Add the rice to the pan, toast 2 minutes, then stir in chicken broth and salsa. Bring to a boil, then lower the heat to low, cover, and simmer for 12-14 minutes until rice is tender. Fold in the reserved veggies and chicken, and top with the cheese. Cover and cook 1 minute. Dish and serve with desired toppings. *If you don’t have an HEB for their pre-marinated meat, check your store for their own marinated options. A homemade marinade is: ½ cup olive oil, 2 limes (1 zested & both juiced), 1 orange (zested & juiced), 3 tbsp Worcestershire, 1 tbsp cumin, 1 tbsp garlic powder, 1 tsp chipotle chili pepper or chili powder, 1 tbsp sugar, 1 tbsp salt, and 1 tsp black pepper.
