Egg Bites

Starbucks Egg Bites are one of my favorite on-the-road breakfast foods. They’re filling, full of protein, and a low carb option to balance out the snacks we like to eat. These at home Egg Bites are great for everyday breakfasts at home. They’re customizable to your preference and easy to make. Just refrigerate and pop in the microwave!

Ingredients

  • 8 eggs
  • 2 tbsp 1/3 less fat cream cheese
  • 2 tbsp light sour cream
  • 2 tbsp milk
  • 2 tbsp hot sauce
  • 1 1/2 tsp salt
  • 1 1/2 cups shredded cheese of choice, divided
  • 3/4 cup breakfast meat/steamed chopped veggies
  • Recipe

    To a blender or food processor, combine eggs, cream cheese, sour cream, milk, hot sauce, salt, and 1 cup of the shredded cheese. Mix until well blended. Spray a 12-cup muffin pan with non-stick spray. Fill each cup with 1/4 cup of the egg mixture. Evenly distribute remaining cheese and 1 tbsp of your meat/veggie of choice. If using chopped veggies, I recommend steaming them for 30 seconds in the microwave first. Bake at 350ºF for 12-14 minutes or until set.

    Approximate Nutrition Information per 1 (makes 12): 140 calories, 10.5g fat, 1.5g carbs, 10g protein
