Curly Cuke Turkey Bites

Ready to impress your holiday guests? Look no further than this festive finger food! Beautifully sliced and ribbon folded Pure Flavor® Poco Bites® Cucumbers pair perfectly with deli or leftover holiday turkey!

Ingredients

  • 4 sourdough bread slices
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp honey dijon
  • 2 tbsp light mayo
  • 4 slices Swiss cheese, cut into 4
  • 4 Pure Flavor® Poco Bites® Cucumbers
  • 1/2lb roasted deli turkey, 1-inch wide pieces
  • 4 tbsp whole berry cranberry sauce

    Trim away the crusts from the bread slices and cut into 2-inch squares. Drizzle 1 table of the olive oil in a large skillet. Arrange the sourdough slices in a single layer in the pan. Brush with the remaining olive oil and sprinkle with salt and pepper. Toast on both sides until lightly browned. Transfer to a plate and cool. Using a vegetable peeler, carefully slice cucumbers lengthways into long, thin ribbons. Evenly disperse honey Dijon and mayonnaise in the center of each bread slice and spread evenly with a spoon. Top with 1 cheese square, 1/2oz turkey, 1 teaspoon cranberry sauce and 2-3 cucumber ribbon curls. Secure with a pick and plate.
