Cucumber Pineapple Salsa Topped Cod

Ingredients

  • 2 6-8oz cod filets
  • 1/2 medium red onion, divided
  • 1 lemon
  • 1 lime
  • Salt/Black Pepper, as desired
  • Olive Oil, spray
  • 3 Pure Flavor® Poco Bites® Cocktail Cucumbers, diced
  • 1 cup diced pineapple
  • 1/2-1 jalapeno, finely diced
  • 1/4 cup cilantro
  • Recipe

    Preheat the oven to 375°F. Slice half of the onion into 1/4” slices and finely dice the remaining onion. Slice half of the lemon and lime into thin rounds, and set the other halves aside. Pat cod fillets dry with a paper towel. Season both sides with salt and pepper. Evenly disperse the onion slices in the bottom of a baking dish. Lay seasoned cod filets on top of the onion. Arrange alternating lemon and lime slices on top of the cod. Spritz evenly with olive oil. Bake 20-25 minutes, or until it easily flakes with a fork registering with an internal temperature of 145°F. In a medium bowl, combine cucumber, pineapple, jalapeno, diced red onion, cilantro, the juice of the remaining lemon and lime halves and 1/4 tsp salt. Mix until combined well. Plate over your favorite cooked rice, remove and discard the cooked lemon and lime slices. and garnish with cucumber pineapple salsa.
