Cucumber Melon Shrimp Tacos

Ingredients

  • SHRIMP
  • 1 lb shrimp, peeled and deveined
  • 1/2 tsp garlic powder
  • 1/2 tsp Chipotle chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/2-1 tsp salt
  • 1/4 cup olive oil
  • 1 lemon, zested and juiced
  • 1 lime, zested and juiced
  • SALSA
  • 2 cups diced Pure Flavor® Solara™ Mini Melon
  • 1 cup diced English cucumber
  • 1/2 cup finely chopped red onion
  • 1 jalapeno, steamed, halved and sliced
  • 1/2 cup roughly chopped cilantro
  • 1 lime, zested and juiced
  • 1/2 tsp salt
  • Tortillas
  • Cotija Cheese
  • Recipe

    To a medium bowl, add the shrimp, garlic powder, chipotle chili powder, paprika, cumin, salt, olive oil, and lemon and lime juices and zests. Toss well and allow the shrimp to marinate 15-30 minutes. Heat a skillet or grill pan on medium-high heat. Once hot, cook the shrimp for 2-4 minutes per side or until slightly pink with an internal temperature of 145°F.

    Carefully slice the melon in half between the stem and the base and remove the seeds. Remove the flesh from the melon, leaving the outer layer intact. Dice the melon and cucumber in 1/4-inch cubes. To a medium bowl, mix together the melon, cucumber, onion, jalapeño, cilantro, lime zest and juice and salt. Once combined well, transfer to one of the melon halves.

    Toast tortillas on both sides on a skillet on high heat to desired crispness. Fill each tortilla with desired amounts of shrimp, salsa and toppings.
