Crusty Baked Potatoes with Whipped Feta

Now THIS is a glorious baked potato…Ina Garten’s Crusty Baked Potato with Whipped Feta! Crispy on the outside, fluffy on the inside and layers of delicious flavors with the fresh herbs, lemon, and rich whipped feta filling! This whipped bit of goodness is also perfect as an omelet topper, in potato salad, or as a sandwich spread! It’s possible this becomes your favorite new side dish.

Ingredients

  • 6 oz Greek Feta, crumbled
  • 2 oz cream cheese, room temperature
  • 1/3 good olive oil
  • 2 tbsp lemon juice
  • 1/2 tsp Kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh rosemary
  • 2 tsp fresh thyme leaves
  • Grated zest of 1 lemon
  • 1 tbsp coarse sea salt or Kosher salt
  • 4 large Idaho baking potatoes,
  • scrubbed & dried
  • olive oil
  • Recipe

    For the whipped feta, combine cream cheese, feta, lemon juice, olive oil, salt, and pepper in a food processor, and pulse until well combined and fluffy. Refrigerate until ready to use. Preheat the oven to 400ºF. Place the rosemary, thyme, lemon zest, and salt in a mini food processor, and pulse until finely chopped. Pour in a shallow dish. Pierce the potatoes all over with a fork. With each potato, rub all over with olive oil, roll in salt and herb mixture, and place on a baking dish. Bake for 60-75 minutes or until tender.
