Crockpot Roasted Chicken

I mean LOOK how BEAUTIFUL this slow-cooker style rotisserie chicken turned out! I’m a super fan and advocate of picking up a rotisserie at the store. They’re healthy, delicious, and super convenient. I wanted to give it a-go at an at-home version, and it did not disappoint! With the gravy ladled on top or for dipping along with a yummy side dish (ours was mashed potatoes and broccoli), it was amazing! With the leftovers, we made chicken sandwiches and chicken salad!

Ingredients

  • 1 whole chicken, 4-6 lb
  • 2 lemons, 1 halved & 1 sliced
  • 6-8 garlic cloves, roughly chopped
  • 4 tbsp olive oil
  • 4 tbsp butter, room temperature
  • Handful fresh herbs
  • Salt or Rosemary Salt
  • 2 tbsp Herbs de Provence
  • 1/4 cup Dano’s Seasoning, optional
  • 1/4 cup + 2 tbsp water, divided
  • 2-3 tbsp cornstarch

    Drizzle 2 tbsp olive oil inside the chicken and 2 tbsp on the outside skin. To the inside, add 2 tbsp butter, halved lemon, half of the chopped garlic, fresh herbs, and a tsp of salt or rosemary salt. On the outside skin, rub on the remaining butter and lay the chicken in the Crockpot breast-side down. Sprinkle on remaining garlic, a tsp of salt of rosemary salt, Herbs de Provence, Dano’s, and lemon slices. Pour 1/4 cup water around the chicken and cook on low 8-10 hours. Once fully cooked, transfer the chicken from the Crockpot to an oven-safe dish and the broth to a small saucepan. Skim any solids from the broth and fat from the surface with a spoon. Mix together cornstarch and remaining water, then whisk into the broth. Simmer until the broth thickens. Meanwhile, broil the chicken on high for 5 minutes. Carve the chicken and serve with a ladle of gravy.
