Crockpot Pulled Beef Tacos

Taco Tuesday night…or any night…this tender and flavorful beef will be a winner! It’s great for not only tacos, but also enchiladas, salads, burritos, quesadillas, or nachos!

Ingredients

  • 3-5lb chuck roast
  • Salt/Black Pepper
  • 1/4 cup water
  • 16oz fire-roasted salsa
  • 16oz salsa verde
  • 16oz tomato sauce
  • 1/2-1 tbsp adobo or taco seasoning
  • Recipe

    Salt and pepper the roast on both sides. Sear 3 minutes per side in a skillet on high heat. To a crockpot, whisk together salsas, tomato sauce, and seasoning. Add the roast to the Crockpot, swirl water in the hot pan, then add it to the Crockpot as well. Cover and cook on low for 8-10 hours. Remove the roast, shred in small pieces, discard any excess fat, and return to the Crockpot. Serve as tacos or your favorite Mexican dish!

    I am making this again as I write this. This is a family favorite and there are so many ways to use the meat beside just tacos.
