Creamy Tomato Rigatoni

It only takes 10 minutes to prepare this delicious creamy tomato pasta. It’s excellent paired with chicken parmesan, pan seared shrimp or scallops or roasted vegetables.

Ingredients

  • 3 tbsp butter, divided
  • 3 cloves garlic, minced 
  • 1/2 cup tomato paste
  • 1 tsp Italian seasoning
  • 1 tsp crushed red pepper flakes
  • 1/2 tsp salt
  • 1 lb rigatoni
  • 3/4 cup heavy cream
  • 1/2 cup freshly grated Parmesan
  • Garnish: fresh basil and parmesan

    Bring a large pot of salted water to a boil and cook pasta per package directions. Once al dente, reserve 1/2 cup of the pasta water and drain. Meanwhile, in a large skillet over medium heat, melt 1 tablespoon of the butter. Add garlic and cook 1 minute. Stir in tomato paste, Italian seasoning and red pepper flakes and cook 3 minutes, stirring often. Add the remaining butter, stir until melted then whisk in heavy cream and parmesan cheese. Fold in the drained pasta and add pasta water, tossing until the noodles are coated well. Serve topped with more parmesan and fresh basil leaves.
