Citrus Marinated Baked Chicken

Ingredients

  • 1 cup orange juice
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 tbsp paprika
  • 1 tbsp herbs de Provence
  • 2 tsp salt
  • 1 tsp black pepper
  • 4-5 garlic cloves, minced
  • 2-2 1/2 lb chicken legs

    In a large bowl, combine orange juice, lemon juice, oil, paprika, herbs de Provence, garlic, salt, and pepper. Coat chicken with marinade in a shallow dish, cover, and maintain 2-12 hours. Preheat oven to 375ºF. Place chicken bone-side down in a roasting pan or baking dish. Spoon a couple tbsp of the marinade on each chicken leg. Sprinkle with additional herbs de Provence, salt, and pepper. Bake 50-55 minutes or until chicken reaches an internal temperature of 165ºF.
