Christmas Shopping Bourbon Chicken

Last week while doing some Christmas shopping, I was asked a minimum of 6 times if I’d like a sample of tasty mall food court chicken. I passed as I was afraid it would have a side of COVID, but it made me want some at home. This is a quick version in your crockpot. If you prefer the charred/sear style, you can cook the thighs on a grill or grill pan, bring the sauce in a saucepan to a light simmer until it thickens, then toss the cooked/chopped chicken in the sauce.

Ingredients

  • 1/3 cup apple juice
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 3 tbsp apple cider vinegar
  • 2 tbsp honey
  • 1/4 cup water
  • 1/4 cup bourbon or broth
  • 4 cloves garlic, minced
  • 1/4 tsp ground ginger
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 1/2-1 tsp red pepper flakes
  • 3 lb boneless skinless chicken thighs
    cornstarch slurry: 3 tbsp cornstarch + 3 tbsp water
  • Recipe

    Whisk together all ingredients in a Crockpot. Add chicken, ensure all pieces are coated well, and cook on low 5-6 hours or high 3-4 hours. With a slotted spoon, remove the chicken from the sauce and chop or slice to desired size. Whisk together slurry and stir into Crockpot sauce. Return chicken to the Crockpot, and cook on high 10 minutes. Serve over rice or noodles, and garnish with green onions.

    This taste exactly like the mall version! Pair with some rice and ut is perfect!
