Cheesy Broccoli Chicken Skillet

Broccoli and cheese are always a dynamic duo! Making it a one-pot dinner makes it even better!

Ingredients

  • 1 cup chopped yellow onion
  • 1 – 1 1/2lb cubed boneless, skinless chicken
  • Salt/Pepper
  • 2 garlic cloves, minced
  • 1 cup uncooked long grain, basmati, or
  • jasmine rice
  • 10.5 oz cream of chicken soup
  • 4 cups low-sodium chicken broth
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese

    To a large skillet on medium-high heat, melt butter, then add onion and chicken. Season with 1/2 teaspoon each salt and pepper, and cook just until the chicken browns and cooked through, about 8-10 minutes. Add garlic, cook 1 minute, then remove the chicken, onion, and garlic to a clean bowl. Toast the rice in the skillet for 2 minutes. Gently pour in the broth and cream of chicken soup, stirring until combined. Bring to a boil, cover, and simmer on low-heat until the rice is fully cooked, about 12-15 minutes. Fold in the broccoli florets and half of the cheese, and simmer 3 minutes. Fold in the cooked chicken mixture, sprinkle remaining cheese on top, and cover for 1 minute for the cheese to melt.
