Cheesy Bacon Ranch Chicken

I’ve seen several variations of this recipe, and decided I needed to try a blend of my own. These measurements will make about 4 sandwiches and can be doubled and cooked in a larger Crockpot if you’re feeding more people.

Ingredients

  • 1-1 1/2 lb chicken breasts
  • 1 tbsp ranch dressing mix
  • 4oz 1/3 less-fat cream cheese, cubed
  • 1/2 cup cooked crumbled bacon
  • 1/2 cup shredded cheddar cheese
  • 2 green onions, sliced
  • Croissants or Buns
  • Recipe

    To a Crockpot, add chicken and evenly sprinkle on ranch seasoning and cream cheese. Cover and cook on high 4-5 hours or low for 6-7 hours. Shred the chicken, and stir in the cream cheese. Fold in the cheese, bacon, and green onions. Scoop onto your favorite toasted bun or croissant.
