Cheese Sauce

This sauce is simple and simply delicious! It’s great for pretzel dog dipping or as a mac and cheese sauce or scallop potato cheese base. You can get creative with your types of cheese(s) and milks. If you use thinner milks, add 1/2-1 tablespoon of flour so that you get the thickness a good cheese sauce needs.

Ingredients

  • 3 tbsp butter
  • 3 tbsp flour
  • 3 cups half & half or blend of milks of choice
  • 12oz cheese (I like 8oz Mexican cheese blend and 4oz Velveeta)
    Salt/White Pepper to taste

    In a medium skillet on low heat, melt the butter, sprinkle in the flour, and stir constantly 1 minute. Stir in half & half and whisk until smooth. When bubbles appear at the edge of the pan, add the cheese(s) and stir the mixture until smooth. Add salt, pepper and cayenne to taste. This recipe might make more than you need for the Pretzel Dogs. If so, it’s great for Mac & Cheese or Cheesy Potatoes with your next dinner.
