Cajun Shrimp Sheet Pan Dinner

MAKE THIS!!! It‘s a great delicious spin on a Low Country Boil! It’s another yummy recipe from Magnolia Table Cookbook: Volume 2! I can’t get enough of all of Joanna’s recipes.

Ingredients

  • 1 1/2 lb baby red potatoes, halved
  • 2 tbsp olive oil
  • 3/4 tsp kosher salt
  • 3/4 tsp black pepper
  • 4 ears of corn, cut in 1” rounds
  • 3 garlic bulbs, tops sliced exposing cloves
  • 8 tbsp butter melted
  • 2 tbsp Old Bay Seasoning
  • 1 1/2 lbs medium shrimp, peeled & deveined
  • 12 oz smoked kielbasa, cut into 1” rounds
  • Garnish: fresh chopped parsley and lemon wedges

    Preheat oven to 425ºF. Line a large sheet pan with aluminum foil. In a large bowl, toss potatoes with 1 tbsp olive oil and ½ tsp each salt and pepper. Spread the potatoes evenly on the baking sheet and roast 25 minutes. While the potatoes are roasting, using the same bowl, toss the corn and garlic heads with the remaining 1 tbsp oil and ¼ tsp each salt and pepper. Add the corn and garlic heads, cut sides up, to the potatoes and roast 15 minutes. In a small bowl whisk together butter, minced garlic from the halved clove tops, and the Old Bay Seasoning. Add the shrimp, sausage, and seasoned butter to the sheet pan and toss with veggies. Bake an additional 5-7 minutes, until shrimp is no longer pink. Serve with lemon wedges. Optional garnish: parsley. Recipe Source: Magnolia Table Cookbook Volume 2. Magnolia emailed the recipe to followers of www.magnolia.com. The cookbook version doesn’t include kielbasa, but it was a perfect addition to this recipe! I used HEB Turkey Kielbasa.
