Brown Butter Lemon Pasta

This weeknight pasta is easy and unbelievably delicious! Sweet notes from Pure Flavor® Oriana® Orange Grape Tomatoes combined with fresh garlic and tart lemons creates a rich, luxurious buttery sauce! Rich in vitamin A and iron and cholesterol free, these tomatoes are also great for snacking, entertaining and adding on salads!

Ingredients

  • 12-16oz pasta (tube-style pasta)
  • 4 tbsp butter, cut into pieces, divided
  • 1 small lemon, thinly sliced into rounds, seeds removed
  • 8oz Pure Flavor® Oriana® Orange Grape Tomatoes, halved
  • 2-3 garlic cloves, minced
  • 1oz grated parmesan, plus more for serving
  • Salt/Black Pepper
  • 1 tsp crushed red pepper flakes

    Cook pasta in a large pot of boiling salted water until al dente. Reserve 1/2 cup of the pasta water then drain the pasta. In a large skillet on medium heat, melt 2 tablespoons butter. Add lemon slices, tomatoes and crushed red pepper (if using), and cook until the lemons brown ad tomatoes soften, about 5–7 minutes. Transfer the lemon slices to a plate. Add remaining butter to the skillet. Once melted, add garlic, sautéing with the tomatoes for 1 minute. Carefully pour 1/4 cup of the pasta water to the skillet. Once the mixture begins to simmer, fold the drained pasta into the sauce. While slowly stirring, sprinkle in parmesan and remaining pasta water. Remove from heat, plate, top with cooked lemon slices and sprinkle with additional parmesan cheese.
