Brown Butter Caper Salmon

This low-carb salmon dish is rich in flavor and super filling!


  • 1/2 head cauliflower, grated
  • 1 1/2 cups Brussels sprouts, trimmed and quartered
  • 3 garlic cloves, thinly sliced
  • 1 lemon, zested and juice half
  • 2-3 tsp salmon seasoning
  • 12 oz salmon, skinned
  • 3 tbsp olive oil, divided
  • 3 tbsp butter
  • 2 oz capers

    Preheat oven to 450ºF. In a medium skillet on medium-high heat, sauté Brussels sprouts in 1 tbsp olive oil. Season with salt and pepper and cook until lightly browned, about 4 minutes. Slide sprouts to the side and drizzle 1 tbsp oil on the opposite side. Sear salmon on 1 side for 3 minutes. Flip the salmon and place pan in the oven for 5-7 minutes. For the cauliflower, heat 1 tbsp oil on high heat. Cook cauliflower until tender and slightly browned. Stir occasionally and season with salt and pepper. For sauce, heat butter on medium-high heat. Sauté garlic and capers until butter browns, about 2 minutes. Add zest, juice, 1 tbsp water, season with salt and pepper, and simmer 1 minute. Plate salmon and side dishes. Pour sauce over the salmon and cauliflower. *Note: There are many salmon seasonings you can use…I chose Chef Paul’s Magic Salmon Seasoning. This recipe was adapted from Marley Spoon
