Broccoli Cheddar Chicken Bake

No Peek Chicken (posted last year) is one of my all-time favorite recipes. This Broccoli Cheddar Chicken Bake would be its sister recipe. Love an easy one-dish wonder!

Ingredients

  • 2 Knorr Chicken Broccoli Rice mix
    Seasoning (garlic all-purpose)
  • 14.5 oz can low-sodium chicken broth
  • 10.5 oz can cream of chicken (I used Campbell’s Healthy Request)
  • 10.5 oz milk
  • 10.8 oz bag frozen broccoli florets
  • 1-1 1/2 lb boneless, skinless chicken
  • 8 oz shredded cheddar cheese, divided
  • Recipe

    Preheat the oven to 375°F. On both sides of the chicken, sprinkle with seasoning or salt and pepper. To a 13”x9” baking dish, whisk together broth, cream of chicken, and milk. Once combined, add rice mixes and half of the cheese. Evenly distribute the broccoli and nestle the chicken within the rice base. Sprinkle on remaining cheese, cover tightly with aluminum foil, and bake 45 minutes. Uncover and bake an addition 10-15 minutes or until the chicken is cooked through and cheese is toasted.
